As you may have noticed, we took a bit of a hiatus because you know there is a little pandemic going on. However, we can say it's so gourd to be back!
Some of you may know, and for those of you that don't, we have a monthly "Superfood" that we highlight in our dining hall and October's Superfood just so happens to be pumpkin! Pumpkins aren't just for pumpkin spice lattes and Halloween! They are loaded with key vitamins and minerals and are a great staple to add to any diet all year round. Within this post you will find fun facts about pumpkins, a yummy recipe, and a few jokes because we can all use more laughs these days.
DID YOU KNOW
The bright orange color of pumpkins is a giveaway that they are loaded with the important antioxidant beta carotene! They also contain potassium, vitamin A, and are 90% water. The pumpkin seeds offer protein and key minerals.
This vegetable is typically used to make pies, soups, and breads but can be included in a variety of dishes.
The largest pumpkin pie ever made was over 5 feet in diameter and weighed more than 350 pounds!
When choosing a pumpkin, look for one with 1 to 2 inches of stem left. Avoid pumpkins with blemishes and soft spots. It should be heavy but shape is unimportant.
Pumpkins range in size from less than a pound to over 1,000 pounds. The largest pumpkin ever grown weighed 1,140 pounds!
The top pumpkin production states Illinois, Ohio, Pennsylvania, and California.
